Here are 5 different homemade enchilada sauces – a classic, a creamier one, a green one, a charcoal one and of course, a slow cooked “set and forget” one. All are vegan or have easy vegan substitutions.
My Fast Classic Enchilada Sauce. Full of flavour and yet only takes minutes to throw together into a pot, then just let it simmer away for 10 minutes.
Tomato Jalapeño Enchilada Sauce by The Faux Martha. This has a few more ingredients that the Essential Classic recipe which gives it a more complex flavour, a great balance of sweet with slightly tart (from the vinegar) and the addition of sour cream makes this creamier and a paler colour which I really like. (Sub with almond milk to make it vegan)
Tomatillo Cilantro (Coriander) Lime Enchilada Sauce by Over The Big Moon. This recipe includes canning instructions – make a big batch and store it up a year!
Fire Roasted Red Enchilada Sauce by Sumptuous Spoonfuls. Made by charcoaling the tomatoes and red peppers, plus cocoa, makes this a sauce with a great depth of flavour and I love the deep red colour.
Slow Cooker Enchilada Sauce by Elliot Crafty Creations. Just set and forget, and enjoy the extra flavour that comes from anything slow cooked.
