It’s hot, it’s creamy, it’s cheesy and loaded with bacon. This Cheese and Bacon Dip is every snack monsters’ dream come true, especially because it’s so fast to make. It is completely different from those tubs you get at the supermarket!

Serving it in a bread bowl is optional…. but it’s a terrific way to serve it!!

CHEESE AND BACON DIP – IN A BREAD BOWL!

I will never forget the first time I had dip in a bread bowl. I was 12, and it was a a retro Soup Mix French Onion dip. I ate so much darn dip and the bread bowl, I sat in the corner like an overstuffed Oompa Loompa while everyone else played party games.

I was 12. I lacked self control.

Wait. Who am I kidding. I’m 30-something and I still lack self control!

So that first experience of dip in a bread bowl ruined me for life. Because dip in bread bowls is not just about the dip. Equally as important is that dip soaked bread that everyone at the party fights over, even well before the dip is finished.

As of 10am this morning, I had no idea what I would be post this afternoon. I like to think I’m that person with a professional sounding editorial calendar that I plan weeks and months in advance.

Which I actually do have. But one of the luxuries / dangers of being the Executive Managing Editor of a simple sole-person blog is that I can change it on a whim at the last minute. Sometimes it’s because I just want to test a recipe one more time, just to be sure. Sometimes it’s because even though I had a great week of recipes planned, I’m still not happy with a recipe – or my taste testers are divided on the “best” version (such being the case today for Blueberry Cheesecake Bars I had originally planned to post).

And other times, also like today, I wake up and even though I have a handful of other sweet recipes I could use instead, I just have an urge to share something savoury.

Usually something cheesy.

And bacony.

Hot and creamy.

Well hello there Mr Cheese and Bacon Dip. I believe you fit that bill perfectly.

PS Because cob bread varies in size, put excess dip in a ramekin or other heatproof bowl. Or do as I did and grab some bread rolls and make Baby Cheese and Bacon Dip Bread Bowls!!

PPS Look – I even made a video. Today turned out to be a rather productive day – quite a turnaround from waking up to have no idea what recipe I’d be sharing today!

Recipe video above. This warm dip is really creamy, super cheesy and loaded with bacon. It takes minutes to make in the microwave! Serving it in a bread bowl is optional - I love it because I love tearing into the dip soaked bread. This makes around 4 1/2 - 5 cups of dip. Plenty! 

Ingredients

  • 350 g / 12 oz bacon , chopped
  • 250 g / 8 oz cream cheese , softened
  • 1 cup sour cream (preferably full fate)
  • 3/4 cup mayonnaise
  • 1 tsp garlic powder (or sub with onion powder)
  • 1 cup shredded tasty or cheddar cheese (Note 1)
  • 1 cup shredded mozzarella cheese (Note 1)
  • 1 cup shallots / scallions , chopped (~4 - 5 stalks)

Bread bowl & topping (optional)

  • 1 round cob bread (sourdough works best)
  • 5 Jatz / Ritz or other plain savoury cracker , crushed (Note 2)
  • Oil spray

To serve

  • Crackers , chips, toasted bread

Instructions

  • Cook bacon in a non stick skillet / fry pan over high heat until browned. Transfer to paper towel lined plate to drain.
  • Mix cream cheese, mayonnaise, sour cream and garlic powder together in a heat proof bowl.
  • Stir through most of the bacon, all the cheese and most of the shallots. Microwave on high for 3 minutes. The dip may look like the oil from the cheese has separated. Just stir well and it will come (and stay) together.
  • If serving as is, pour into a serving bowl, top with remaining bacon and shallots.
  • Serve with crackers, chips and the bread you pulled out to create the bread bowl (I toast it).

Bread bowl

  • If making this in a bread bowl. use a small knife to cut a circle on the top of the cob loaf then remove enough bread to make a bowl. Pour the dip into the bowl.
  • Top with crushed crackers, spray with oil. Bake for 20 minutes at 180C/350F until top is golden.
  • Top with remaining bacon and shallots. Serve warm.

Recipe Notes:

1. I like to use 1 cup of cheese like tasty or cheddar for flavour and 1 cup of mozzarella for stretch! You can substitute with swiss, gruyere or any other melting cheese that has flavour and salt. You could also forgo the mozzarella and sub with another cheese.
2. I use ritz or other crackers to top the dip when baking to stop the surface from drying out and to add crunch. You can use any savoury cracker. You can also sub with panko breadcrumbs + grated parmesan (or just breadcrumbs + salt + drizzle of oil).
3. This dip is really best served warm so it's nice and creamy, or at least at room temperature. It becomes harder when cool. To make ahead, if not using a bread bowl, I mix it together but do not microwave. Then when ready to serve, microwave, give it a good mix then divide between bowls.
If using the bread bowl, use a sourdough cob bread like I did. You can assemble the dip in the bread per the recipe, then to reheat quickly, microwave the cob bread then bake to make it crusty. If you don't have a microwave, you will need to wrap the bread in foil and bake for 20 minutes, then unwrap and bake for 20 min (to make the dip warm in the middle).
If you don't have access to an oven for reheating, then bake the bread with the dip int it to make it crusty, let it cool then refrigerate. Then when ready to serve, microwave to reheat (if using sourdough, it stays pretty crusty even when reheated in the microwave).
4. Nutrition per serving, assuming 10 servings, excluding bread because I cannot be held responsible if you eat the entire bread bowl. This recipe makes around 4 1/2 - 5 cups of dip.cheese-and-bacon-dip-nutrition

    I made this yesterday – HUGE hit!!!!! My son in law was putting it on everything and I had to give him the recipe!
    I have a question about the recipe – the recipe states 12 oz bacon – is that uncooked bacon? I got a 16 oz package and cooked it then weighed it and it was 4 oz. So I would assume that it would be the uncooked weight.
    Thanks! Glad I somehow found your site!!!!! 🙂

    Yep a whole bunch of spring onions but only the white parts – finely chopped. Because the cobb cooks for so long in the oven everything is nice and cooked down.

    So I really like this recipe just as it is, but I had to tinker with it just a tad. I made it per your recipe and then added it to cooked broccoli, put it in a casserole dish, topped with cheddar and panko and stuck it under the broiler for a few minutes to brown the top. Cheese bacon broccoli casserole? Yum! My husband and I also decided it would make a wonderful twice baked potato filling with some mashed potatoes added to it. I’ve never made twice baked potatoes before, but now I feel like I could. Thank you!

    Hello Oompa Loompa, ha,ha,haaaa, love Chesee always did. My House is never out Of Chesee . Like the idea Of cob bread. Am Tired just Finish making citrus marmelade-home grown qumkoat, lemon and shop blood oranges and two mandarins. That’s Xmas gifts. Also prepard two extra large jars with qumkoat for Liquer should be ready by Xmas, That’s for visiters. We have very UNUSUAL spring, inSept. Had 30hrs LESS sunshine. Heavy rain, wind, Hail , very Cold ,floding. Regards, Vera. Have wickedly w/End. Doza loves pancakes, he is GORGES!

    No doubt about it–this dip looks divine, and my mouth was watering as I read the recipe and watched the video. All of a sudden, sweet Dozer showed up, eyeballing that bread bowl full of dip, and I cracked up–out loud! I just love this blog!!

    You guys are driving me nuts!! The cheese dip looks fantastic! I”m drooling all over my keyboard and then add insult to injury, Lisa Kelly has to add hers. You are torturing me. Here we are stuck in a motel — we had to evacuate because of Hurricane Matthew and we just have a little bit of nibble food. We may be stuck here another 2 days and no stores, restaurants are open. Please eat some of that delicious food for me. It will make me feel better 🙂 xoxo

    This looks amazing! I first tried a bread bowl dip when I was working on a station in rural QLD, tried to replicate it back in Wales but I could never found the perfect dip but I can’t wait to give this a go! Thank you Nagi! 🙂

      You know, I did actually get a bunch of bread rolls to make mini ones but it was a pain scooping them all out!!! 🙂 Plus also little ones for a single person needs a really tiny bread which I couldn’t find…. We don’t have mini slider buns here like you do. It’s irritating!

    As an Aussie, I love me some hot cheesy bacony anything in a bread bowl hahaha. For years I’ve done the whole cobb dip in it’s various forms, my Artichoke dip being the most popular but truly my family are all about oozy cheese and everything being better with bacon so this is now on the “must make ASAP” list.

        I have this rule that when I make it I won’t tell people it’s artichoke dip because some people are quite as obsessed as me. So I just say “try it” and everyone always falls madly in love hehehe.

            I would love to. Hopefully you can “pimp” it and make it even better!!!!!!

            1 can artichoke heats, cut into quarters
            310g grated tasty cheese
            300ml sour cream
            250g cream cheese
            3 cloves garlic, crushed
            1 bunch of spring onions, sliced
            125g butter
            1 cobb loaf
            2 french sticks

            Melt butter in saucepan and saute the garlic and spring onions
            Add the cheese and sour cream and mix until melted
            Add artichoke and mix
            Cut top off cobb and empty. Put the mixture inside and put the lid back on
            Wrap in two layers of foil and place in oven for 1 1/2-2 hours
            Open and serve

            Nagi – this is not a diet recipe but it’s a feel good comfort food one that has seen my family and friends smiling for nearly 20 years. If you can tweak it and make it even better I would love to hear your thoughts!

            Looks fantastic Lisa! Just to confirm – a whole bunch of spine onions? Sounds like quite a lot but I expect they wilt down lots. I think I might have to share this in the coming weeks!!!
