Healthy Creamy Broccoli Soup

Surprise yourself with how creamy a creamy broccoli soup can be (made without cream!).  Super healthy with only 165 calories per serving, this makes a wonderful light meal or lunch that takes only 15 minutes to make. Croutons are not optional!

Amazingly creamy soup with no cream! Only 160 calories, vegan friendly, on the table in 15 minutes.

I’ve made cauliflower soup plenty of times, but this is the first time I attempted broccoli soup. It really is just like the consistency of cauliflower soup, really creamy (but not a drop of cream in site!) but being so green I just feel like it’s better for my insides – full of nutrition!

With a hand held blender stick, this is so quick to make – on the table in 15 minutes. Croutons are not option, you must!

Creamy Healthy Broccoli Soup

Ingredients

  • 1 large head of broccoli
  • 1 potato , peeled and roughly chopped into cubes about 1.5cm / 1/2" cubes
  • 1 white or brown onion , roughly diced
  • 2 cloves garlic
  • 2 cups / 500 ml vegetable stock / broth
  • 1 cup / 250 ml milk (low fat, cow or soy)
  • 1/2 cup / 125 ml water
  • Salt and pepper

Instructions

  • Cut / break broccoli into florets into pieces about half the size of a golf ball. Roughly cut most of the stem, other than the main stem, into thumb size pieces. Discard the main stem, or keep for another use.
  • Place all ingredients except milk, salt and pepper in pot, put on lid, bring to boil then turn down heat to medium and let it rapidly simmer for 8 to 10 minutes.
  • Remove lid, add milk, bring back to boil, then remove from heat and whizz with hand held blender.
  • You can thicken the soup by cooking it for longer on the stove on a medium low heat.
  • Season to taste with salt and pepper, serve with croutons if desired.

Croutons

  • Cut stale bread into cubes, lightly spray with olive oil, spread on baking stray and bake for 3 to 5 minutes. Sprinkle with salt then top on soup.

    That was a lovely and easy soup to make. I do not think I spiced it enough, but I was not looking for yum…I was looking for a nice soup to make me healthy. I enjoyed it and I need to spice it up the next time I make it. I will be making it again!

    Loved this easy healthy soup. Doubled the recipe as the broccoli looked so lovely at the store. Added a healthy pinch of cayenne pepper as well. Do you think this would freeze ? Sometimes potatoes don’t freeze well. I think you could also substitute fat free evaporated milk for this. Thanks so much!

      I’m so pleased to hear that Bec! Hmm, never thought about coconut milk, I wonder….what do you think about adding some coriander and dash of lime? To give it a slight Thai twist? Just feeling that just adding coconut might make it a bit off balance. N xx

        Hi Nagi,

        Yes, I’ll try that….3rd time on the soup now….love it! It’s quick and easy to make AND delicious!

        Not sure where your based, but mild here at 9am…19c. We’ve had a huge amount of rain, but this morning, French doors open to feel the sun and listen to the bush birds, cockies & corellas.

        I have some soup made up for lunch today…hits the spot 👍

    NAGI!! My eldest LOVES this soup. She hates onions, but she loves this soup. We all loved this soup, but Katharine loved it most of all. Absolutely delicious! Another recipe that I imagine is near impossible to foul up. It was so simple & delicious. I did peel & add the stalk, I couldn’t bear that going to waste with no use on my horizon. Thank you again Nagi.

        Well, I have raised them on good food, that’s for certain! Although, I’m getting a little tired of hearing her beg for this soup every single day!! Every day Nagi! She wants to take it for lunch. I made it on the 4th, it’s been 5 days of harassment from her.

    I have made a soup like this for years but add chilli flakes as the soup is cooking (I also use the stalks) and a generous amount of spinach when blending. The soup then turns a wonderful deep green. It is full of goodness and a favourite in our house. I have only recently found your website and love the simplicity of your recipes. They may be simple but they certainly pack a punch with some fabulous twists. Thank you.

    Hello

    How large is a large brocoli? I am cooking this soup now and I don’t seem to have enough liquid? Should the liquid cover everything in the pot?

      Hi Cathleen! Don’t worry if the liquid doesn’t quite cover everything, when you put the lid on, the bubbles sort of end up covering the exposed part of the broccoli AND it steams too 🙂 It’s safer to have less liquid than too much because it’s hard to thicken this soup but easy to thin if you don’t have enough liquid. A large head to me is around 22cm/9-10″ in diameter (the head). Hope you enjoy! 🙂

    Well…. What can I say???
    This is bloody beautiful…. Another string to my bow ready for the Aussie invasion…. My daughter arrived… Total suprise… 4yrs Almost… The Melbourne couple arrive Friday +im armed to the teeth with recipes, half are yours!!!
    My only… NOT criticism… Is peel the stalk off the broccoli, slice it into very thin rounds and add it at the beginning.. No joke, the stark is a power house of vitamins!!
