A simple recipe for baked wedges for dipping in the Pink Sauce!

Ingredients
3large Sebago potatoes, peeled and each cut into 8 wedges (Note 1)
1tsponion powder
1 ½tsppaprika
3/4tspsalt
2tbspolive oil
Instructions
Preheat oven to 390F/ 200ºC fan forced (add 20C/30F for convectional).
Toss the potatoes in onion powder, paprika and salt. Drizzle over olive oil, and toss again.
Spread out on a baking tray, then bake for 40 to 50 minutes, turning once, until golden brown and crispy.
Serve with Pink Dipping Sauce.
Notes
1. Sebago potatoes are a particular type of potatoes in Australia that are perfect for making wedges because they become nice and fluffy on the inside and crunchy on the outside.They are the common dirt brushed potatoes you can get everywhere. DO NOT use desiree (the red ones) - these are waxy, suitable for potato salad.If you are in the US, russet is ideal. Yukon Gold is not suitable. For the UK - Maris Piper is a good all rounder which is suitable and readily available in all the supermarkets.
