This noodle salad is a great refreshing salad for Asian style BBQ’s, it’s simple so it matches perfectly with Asian marinated meats. This salad will suit most South East Asian Cuisines, including Thai, Vietnamese, Korean and Chinese.
1. You can substitute the light soy sauce with regular dark soy sauce, however, the colour of the dressing will be a darker colour and so the salad will look browner than in the photo. The other option is to substitute the light soy sauce with 1 tbsp of dark soy sauce and 1 tbsp fish sauce (this will make the dressing colour lighter than just using dark soy sauce and will give the dressing a slightly more complex flavor with a bit of a Thai/Vietnamese spin).
2. The rice wine vinegar can be substituted with lime juice for more of a Thai / Vietnamese spin.
