No more boring beef mince recipes….. Kick off the week with THIS flavour packed Mexican Ground Beef Casserole!! With corn, capsicum/bell peppers and black beans, this rice casserole is juicy, cheesy, and packed with big Mexican flavours.
One pot, quick dinner idea that’s on the table in 30 minutes!
Mexican Ground Beef Casserole with rice
This is essentially the filling for the Mexican Stuffed Peppers I shared a few weeks ago. Why am I bothering?
Because when I share a pork chop recipe on Instagram, people always ask if it can be made with chicken.
When I share a chicken thigh recipe, people always ask if it can be made with breast.
And when I share Mexican Stuffed Peppers, people ask if it can be made without the peppers…… 😂😂😂
Which actually, as strange as it sounds, I thought was a very valid question because I can imagine how irritating it would be to watch that stuffed peppers video and drool when the juicy beef rice filling comes oozing out, knowing full well you have no peppers in your fridge.
So – here’s the filling recipe which is a Mexican flavoured ground beef casserole made with rice. It’s mouth-wateringly delish!!!
What you need for Mexican Ground Beef Casserole
Here’s what you need. Feel free to substitute the capsicum, born and beans with other vegetables of choice – you need about 5 to 6 cups of diced veggies in total.
How to make this Mexican Rice Casserole
This is a one pot quick dinner that will be on your table in 30 minutes!
Essentially, it starts by browning the beef with onion and garlic, then you add a ton of Mexican spices, rice and liquids then you give it a big stir and let it simmer away on the stove until the rice is tender.
To give it a good slug of extra flavour, I like to stir in cheese as well as green onion for freshness (I also like doing this because I get a kick out of watching the cheese melt into the rice 😇), top with a bit more cheese, clamp the lid on and leave it for a minute to let the residual heat to melt the cheese.
The texture of this rice casserole is like a creamy risotto – except it tastes like juicy Enchiladas.
I love the pops of flavour and texture from the corn and beans – adds extra interest!
Another quick beef mince recipe!
Regular readers know I’m a big fan of beef mince. It’s just so easy – no chopping required, highly versatile. A great flavour absorber, quick to cook.
And this Mexican Rice Casserole is the latest addition to my ground beef recipe collection. Other than Bolognese (which is, without a doubt, the recipe I make most often!), a few of my other favourites include:
-
Quick Asian Beef Bowls – there’s a lot of fans of this recipe!!
-
Salisbury Steaks – juicy seasoned beef patties smothered in mushroom gravy
-
Juicy Italian Meatballs – well, actually, all meatballs!
-
Chilli Con Carne, Beef Tacos, Baked Ziti, Baked Spaghetti, Moussaka, Meatloaf, Homemade Hamburger Helper….
I have to stop. I love them all! Of course I do. Otherwise I wouldn’t have shared the recipe!! ~ Nagi x

Great recipe, Nagi! Husband loved it. Only used half the amount of cayenne as ours is super hot. Next time I’ll add a side of corn chips, maybe some smashed avo on the side too as well as a little sour cream.
Thank you for sharing your wonderful recipe!

love this recipe !!!!! made it tonight for the fourth time. always turns out great. i find that I need to add more liquid and let it simmer longer than 15 minutes to cook the rice. who cares??? it’s more than worth a few more minutes. love dozer puppy.

I left out the coriander and cayenne pepper and it was still absolutely delicious!

Great dish, easy to make and ready pretty quickly. Always tastes amazing, I usually use half the mince and add in a tin of lentils instead. Plenty of leftover for the next couple days aswell.

I have made this twice now and it came out wonderful each time! I froze the leftovers both times, and reheating in the microwave with some extra cheese on top and some fresh green onions made it taste better than when it was originally made! The flavor in the recipe reminds me of the Mexican food my Dad makes when I’m home, so it’s very heartwarming for me!

Fourth time I’ve made this recipe. Using basmati rice and cooking a minute or two longer at the lowest gas setting after the boil. Wonderful every time…thank you very much Nagi
Sue says
I followed the directions exactly as written but the rice was nowhere near cooked after the directed time .
Added more water and cooked for longer but still not cooked after another 15 minutes . Not sure what the problem was ???

this was a hit with my son and husband. They really liked eating leftovers in a quesadilla wrap. I’m thinking of trying a vegetarian version for myself. Might use a bit less of the spice mix as I found it too be a bit too strong in flavor. But I added far less cheese, maybe that’s the reason.
And I’m so excited I finally got the email that DINNER is ready for collection (in NZ). I can’t wait to get it but unfortunately I’m sick in bed at the moment …
Thanks Nagi for your site and recipetin meals ! you are such an inspiration

Alex did you try a vegetarian version? I love the original recipe made it heaps of times and it is so darn good. I thought I’d do a veggie version for my daughter.
Alex says
No sorry, I haven’t made a vegetarian version yet but thanks for bringing this back to my attention. I would love to hear how it went in case you try or otherwise I will update as soon as I have tried one. Happy New Year

Replaced minced beef with minced pork, because a colleague doesn’t eat beef. Brought this dish to work and shared with my colleagues and everyone loved it so so much! Every single person who ate it, said it is so delicious and I must admit, this recipe is definitely a keeper. So easy to cook, so delicious to eat!
Mary says
Loved this so much I made it twice. So easy and so flavor some. Definitely a house favourite.

I saved this recipe when i saw in on FB on 2019/2020. I have used it over 50 times and absolutely love it!! its great because the kids love it too!
I plan on making it tomorrow night for dinner, do you think arborio rice will work? I have run out of white and last time i tried brown it didn’t work well.

Totally lovely. Another one of your recipes an instant hit with my family

Our newest fave! I omit the rice and serve on tortillas. Awesomesauce!
IRENE says
I made this last week. It was interesting that the minced beef just ‘disappeared’ or ‘blended’ into the rice. The whole dish was yummy!

I made this (almost) as per the recipe, except I used brown rice (cooked in a rice cooker first til almost done), and left out the cayenne for small people. I used red + green capsicum and slightly less cheese. Really loved this and it’s on the menu again this week.
Cristina says
Absolutely amazing! Was so delicious and loved by the whole family. I’ve been asked to make this at least once a week!
