Am I the only one romanced by the idea of breakfast in bed but actually find it really impractical? It is so awkward to use cutlery with a tray gingerly balanced on your lap. And if it’s toast, pastries or muffins, I find myself holding the plate right up under my chin as I eat it just to make sure that I don’t get crumbs in my bed.
So here’s the thing about this Mini French Toast. It’s crumb free. It’s small enough to eat with your hands.
It’s a truly practical delicious breakfast in bed. It will transform your Sunday mornings. 🙂
One of the other reasons I really adore these is because I have a “thing” about food you can eat with your hands. I think it stems from my love for snacky things and multi tasking – eating with one hand with a glass of wine in the other, snacking while I bash away on the keyboard and picking at chips ‘n dip with one hand while gesturing wildly with the other as I gasbag with my friends. 🙂
Oh, and another – it is ridiculously fast to make. I know you don’t believe me, looking at that pile of deliciousness! Seriously, it’s a leisurely 15 minutes and you can make the whole batch in one fry pan.

Mini Strawberry French Toast
Ingredients
- 1 cup sliced strawberries
- 2 tsp sugar (white)
- 2 eggs
- 2 tbsp milk (full or low fat)
- Pinch of salt
- 1 - 2 tbsp unsalted butter (more = yummier)
- 10 slices of baguette (french stick), around 2 1/5" / 3cm thick
To Serve
- Maple syrup (not optional!)
- Confectioners sugar (icing sugar), for dusting (optional)
- Extra strawberries (optional)
Instructions
- Combine the sugar and strawberries in a bowl and set aside to macerate (it sweats to form a bit of syrup).
- Lightly whisk the eggs, milk and salt in a shallow bowl.
- Melt butter in a large fry pan over medium high heat.
- Dip each side of the bread slices into the egg, 3 seconds on each side. Place in the pan and fry each side for 2 1/2 minutes, until it is nicely browned.
- Remove from the fry pan, and serve, topped with the strawberries (use the syrup created), maple syrup and confectioners sugar (icing sugar), if using.

I’m glad you said that because I can never get comfortable eating in bed. I have some lovely bed tray thingos but we’ve used them once. I’d much rather get up and eat at the table or even better, outside in the sun. What a perfect breakfast this is!
