These Cinnamon French Toast Bites are so much fun to make! You kind of “sauté” them, as though you are stir frying! And it goes without saying that they’re fun to EAT too. 🙂
Those of you who have been following along for a while will know that I have a weakness for french toast. I’ve shared 9 french toast recipes so far, and I’ve even created a recipe collection for them! (You can check it out here -> New Ways With French Toast).
I expect to run out of ideas soon. A french toast drought.
But until then, I’ll keep sharing new takes on french toast that I come up with. No matter how wacky they may seem, as long as they’re scrumptious! And these little babies certainly fit that bill.
They taste like mini cinnamon doughnuts! With about 80% less calories – win, win, win!!
These French Toast Bites are really just a variation on my Cinnamon French Toast Sticks. The only difference is that the bread is cut into cubes and they are way more fun to cook.
“More fun to cook?”, I hear you ask. Yes, they really are! Because they are in the shape of cubes, browning each side by turning them is a real pain. So instead, I “sauté” them with a wooden spoon, as though I’m making a stir fry. It works perfectly!
Food you can eat with your hands. My favourite kind….
OK, here we go, here are my Baby Hands on show for you to have a giggle at. Gives you some perspective of the size of these French Toast Bites. But remember, my hands are abnormally small so the French Toast Bites look larger than they actually are!!

Cinnamon French Toast Bites
Ingredients
- 4 thick slices of slightly stale white bread (1"/2.5cm thick) (Note 1)
- 2 large eggs (or 3 small eggs)
- 1/4 cup milk
- Pinch of salt
- 1/4 cup white sugar
- 1/2 tsp cinnamon powder
- 3 tbsp butter , separated
- Maple syrup to serve (not optional!)
Instructions
- Cut the crust off the bread, then cut each piece into 9 equal cubes.
- Whisk the eggs, milk and salt in a medium bowl.
- Combine sugar and cinnamon in a shallow bowl.
- Melt 1 1/2 tbsp of butter in a fry pan over medium high heat. Don't let the butter brown.
- Quickly toss half the bread cubes in the egg mixture and use your hands to shake off excess egg mixture. Place the bread cubes in the fry pan and use a wooden spoon to "sauté" them until browned on all sides - about 2 to 3 minutes.
- Remove the bread cubes from the fry pan straight into the sugar mixture. Toss to coat, then remove onto a plate.
- Repeat with remaining bread cubes.
- Serve immediately, with maple syrup for dipping.

Nagi says
Hi Lauren! Could you help me out a bit and tell me what happened? 🙂 N x
Ebony says

Nagi says
Hi Ebony, sorry, doesn’t freeze well, the sugar sweats. 🙂
Tracey says
*BROCHE Rolls not brioche rolls that had Strep, ?For the love of cookies. Epic fail there! Haha
Tracey says
Know I’m late to the party (what else is new lol) hahahaha but do you think this would hold up/work with staprioche rollls seem to have extra of those in the freezer then the brioche bread (I know what a problem to have lol) But do you think it’s still too delacate to use after being set out to “stale”? I so love Brioche, but will use your kind of bread you have best for this!!! Thanks Tracey! Ps
I want to keep simple, simple! Have you tried a tad of pre cooked crumbled maple flavrored sausage mixed in with them as well? Just sayin…?Thanks, Tracey!
Nagi says
Never too late! 🙂 I do this brioche might be too soft unless you leave them out to stale overnight. As for adding crumbled sausage….oooh YES!!!!
Mixedme gamings says
hey is it ok if i use honey instead of maple syrup ?
Nagi says
Sure!
Corinne says
Hi Nagi,
Great idea for stale breads. Have tou tried keeping this toast longer in the refrigerator or freezer? I’m wondering if this freezes well.
Nagi says
Hi Corinne! Unfortunately this doesn’t keep in the freezer. 🙂 Quick to make though!
winifred says
what can i use in the place of eggs
Nagi says
I’m sorry Winifred, I don’t know! 🙁
Emma says
Is it ok to use white bread instead of stale bread
Emma says
Is it ok if I use normal white bread instead of stale bread…I tried with the French toast sticks and they work just as well..
Nagi says
Yup! You sure can! 🙂
Jenni says
I see in the recipe it says “serve immediately.” Do you think it’d be possible to prep these as a snack for a big brunch? Prepared a bit in advance and plated for intermittent snacking? Or do you think they’d get stale/soggy/not good pretty quickly?
Nagi | RecipeTin says
Hi Jenni! They’re good for around 30 minutes or so, then they start to sweat because of the sugar which causes them to go a bit soggy. But not overly soggy! What you can do is have extra sugar/cinnamon and toss them in it – the sweat will actually help it stick!
Crystal says
How do you make sort of stale bread? Leave it out overnight?
Nagi | RecipeTin says
Hi Crystal! Yup, that’s what I do 🙂
Beatrice Lawson says
Just made those for my son for breakfast and had to steal a few bites, they were that good. We don’t use maple syrup, sometimes he asks for whipped cream but the cinnamon sugar made them sweet and flavourful enough that nothing else was required. BTW< I cooked them in a mix of butter and sunflower oil. Delish.
tess says
Tryed them with softened honey butter and I’m addicted!!!
Nagi | RecipeTin says
So glad you loved it Beatrice!! Thank you for letting me know!! N x
Amaryllis @ thetastyother.com says
This looks so perfect, Nagi! I love everything bite-size- and when it comes in french toast form… Well, I can’t think of anything better!
Lisa says
Is there anyway this could be made the night before and warmed in the oven? I need easy for Christmas morning!!!
Nagi | RecipeTin says
Hi Lisa! To make Christmas morning really easy, I suggest making the egg mix and cutting the bread the night before. Then in the morning, honestly, cooking these take as much effort as reheating!! They are super duper quick 🙂
Nagi | RecipeTin says
ME TOO! <3
shiniboi says
I love it how you have a nutrition fact there. Thanks for this great recipe. BTW the slightly stale bread means – slightly past the consume date? Not the moldy ones right?
Nagi | RecipeTin says
Glad you find it useful! That’s right – NOT mouldy bread. by stale, I mean bread that is a bit dry. Easiest way to do this is just leave bread out overnight i.e. remove it from the bag.
Dawn says
tried this this recipe this a.m.!! Fabulous!!!
next time, i will instead: pre-melt butter (micro) and add to heated pan [to keep butter from browning too easily] and less sugar needed for ‘shaking’. after i’d dusted all the cubes, there was quite a bit of sugar left over… trying to be frugal! 😉
too, i used fresh (from a neighbor’s backyard!) eggs. i think next time i’ll only use 1 – they really go much farther than store-bought.
Nagi | RecipeTin says
Oh wow, you are so lucky to have fresh eggs! I’m so glad you enjoyed it! Fun, isn’t it? Did you feel like you were sautéing cubes of tofu when you were cooking them?? 😉 Thank you for coming back to let me know you loved it!!
Wendy says
I would love to make this for my children, they look delicious! My daughter has an egg allergy. What could I substitute the egg for?
Nagi | RecipeTin says
Hi Wendy! When you need to make an egg free one, the recipe is quite different. I recommend using the batter in this recipe – http://www.momables.com/egg-free-french-toast-recipe/ Use this batter and follow the steps in my recipe. 🙂
Jennifer says
I am SO excited to make these for my 1 year old son! He loves french toast but it is hard to pack for the baby sitter because it gets flat and soggy fast! Hopefully this will work! I can’t wait to try it!
Nagi | RecipeTin says
Hi Jennifer! I hope your son enjoys them! 🙂
jen says
These look great! Question…do you think it would it work to coat with egg mixture, put in baking dish, sprinkle with cinnamon sugar, and bake them?
Nagi | RecipeTin says
Hi Jen! I don’t think that will work, you won’t get the crust you need to be able to pick them up 🙂 Sautéing them in a pan is really quick though, promise! 🙂
Po @ Frost and Serve says
Just made french toast last week before my aunt went to Japan. I wish I’ve seen this recipe earlier! She’ll be totally envy when she finds out that I’ve made these without her around. :>
Nagi | RecipeTin says
Awww, your poor Aunt! She certainly missed out!! 🙂 Oh well, just promise her you will make it next time you see her 🙂
