Mini Pizzas in GARLIC BREAD cups, made in a muffin tin! Don’t laugh when you see what I use to cut the rounds. It works! That’s what matters!
These mini pizzas were an invention out of necessity. I had friends with kids around and had planned to make mini pizzas. For the kids, that is. (OK that’s a lie. For us grown ups too).
In typical form, I thought I was super duper organised, whirling around the kitchen with the music pumping, preparing the food for lunch. Only to realise at the last minute that I had forgotten to buy frozen pastry for the mini pizzas. I didn’t even have tortillas or any flatbread around to use instead. And I definately didn’t have time to make my own pastry.
But I did have BREAD! And that’s how these mini pizzas came to be a regular in my “party food” repertoire. 🙂 See how easy they are to make?
I told you I cut the rounds out weirdly! It’s just the tin from canned tomatoes – a large tin (28oz/800g), not a small one. I’m not one of those ultra-thrifty-repurpose-everything types. I use the tin to cut the rounds because the size is PERFECT to make deep dish pizzas in muffin tins! I don’t even know if you can buy pastry cutters that size. All the round pastry cutters I have are too small to make rounds for muffin tins.
The extra little step of brushing the bread with garlic butter is so worth it. It makes the crust beautifully golden and really makes it taste like a cross between garlic bread and pizza. I don’t know about you, but when I order pizza, it goes without saying that garlic bread has to be ordered too. Pizza without garlic bread would be like having sausage rolls without sauce. It’s just not the “done thing”. 😉
These work well for making in advance. Bake them a little less so the cheese isn’t too golden brown, let them cool, then you can reheat them on a baking tray – just 5 minutes in the oven does the trick.
Yum! I know this is more of a party food, but I’d happily have these for DINNER too! (Problem is, I’d eat way too many of them…) – Nagi x

That dog though! We just adopted an 8 month old collie/shepherd and…frankly…she’s kicking my butt. But so worth it. These pizzas are a great way to use bread that may be a bit past its prime, too. Bread is just about the only thing that goes bad in this house. Gonna try ’em this weekend.
Nagi | RecipeTin says
Ohhhhhh…..I had a collie growing up! They are the BEST! They are so much smarter than retrievers 🙂 He would know that sitting under the table wouldn’t do anything, he would be much smarter about it, like doing tricks to get my attention!!!
Maureen | Orgasmic Chef says
Did Dozer get one? He certainly looks deserving.
I made these once but I rolled the bread after cutting it because John likes crusts to be flat. I think I like yours better. I wish I could say mine was the result of invention but it wasn’t. Remember the cinnamon rollup things where you roll the bread, then butter and sprinkle cinnamon sugar? That gave me the idea to use it for crust for a quick lunch.
Yours are calling my name!
Nagi | RecipeTin says
No! I don’t know what you mean!!! But it sounds like something I SHOULD know. Is it on your blog? I’m checking right now
Maureen | Orgasmic Chef says
These are the ones I mean. I’ve never blogged them. It seems pretty easy. 🙂

It works with butter and brown sugar and cinnamon on the inside too.
Nagi | RecipeTin says
OH yes! I’ve done a few of these 🙂 I love ’em! N x (Hmmm…pizza versions of them? Hmm…..)
Rachel (Rachel's Kitchen NZ) says
Oh, love the idea of using garlic butter – I often use bread cases when entertaining the garlic butter would just make them so much more delicious – another winner Nagi:-)

Nagi!! You simply can’t say ” garlic. bread. pizza” all in the same sentence. To an Italian that is a love call. Plus I can see the cheese on it. You suggested stretchy clothes but if I keep making your recipes I will need full blown pure elastic. Now I know it is totally my fault — I have no self-control. The truly sad part about is I don’t want to have self-control. I am pitiful!! 🙂 Love the recipe. Have a great weekend.

Ha! I just posted a muffin tin recipe. Boy, we’re just in sync this week aren’t we? This is totally awesome and such a fantastic idea. I love your ‘bread cutter’! Hey whatever works, right?
Hope you have a great weekend! Give kisses to Dozer…. and maybe a mini pizza or two 😉
Nagi | RecipeTin says
OMG I just saw what you posted….I think my heart actually melted. I’m not even kidding!

Hi Nagi! You know I love muffin tin recipes! And, yes, I did laugh out loud when I saw your “biscuit cutter”! 🙂 Only because I have several sizes of those myself! I figure why buy something when you get it for free! 🙂 Have a happy weekend my friend! 🙂
Nagi | RecipeTin says
NO! You use cans to cut rounds too?? We really must have been related in a past life!! Hope you have a fabulous weekend too Dorothy!! N x

Deliciously Cute!!! I LOVE LOVE YOU! Definitely trying this out for my son who always is asking for pizza! AND today is Pizza Friday. Heading to the market after work ,to get everything I need. He doesn’t like mushrooms, but am going to put it in.

First off, I have to say congratulations on solving the puzzle of what to use to cut the rounds. I am also so happy to hear about your Woolworth’s shopping. Here in the U.S.A. we no longer have our beloved Woolworth’s. At least not in New Jersey. Here it was our 5 & 10 cent store. It disappeared long ago and I still miss it. It was so much fun to shop there. Your recipes are always so concise and never disappoint. You also have to be the only one out there who has any knowledge of proper grammar and punctuation. Thank you for that.
Nagi | RecipeTin says
Gosh Angela, thank you very much for the high praise! So I’m guessing your an Aussie expat! New Jersey is a fabulous place, I visited a friend there about 5 years ago. And I’m glad you don’t think I’m totally weird for using a can to cut the rounds!! <3
Angela says
You’re welcome. No, I am not an expat. I was born and raised in New York. I also use cans to cook in, including making Pumpkin breads in coffee cans for the holidays. Keep the good stuff coming.
Nagi | RecipeTin says
Oooh! I love that! Pumpkin bread in coffee cans….hmm…you may have given me an idea for this years’ Christmas baking!!! N x

Yummy!! This looks delicious Nagi! I see our brunch this weekend!
I use cans to bake mini cakes… so I love that you used it to cut out the rounds! I’m going to have to make a cutter for myself too 🙂
Nagi | RecipeTin says
Oh my gosh! I LOVE that you use cans to bake CAKES! I must give that a go!!

I am an odd one, I don’t like sauce with my sausage rolls!!!! The kids know this so sometimes they put sauce on them just so I can’t steal a bite!!!! And the first thing Mr 8 does if we go for fish and chips is put tomato sauce on his fish, as he knows I won’t eat it then!! Kids!!!!!! 😛
But I am with you on the fact that garlic bread has to be part of pizza night. So the addition of garlic butter to these pizzas makes perfect sense!
As I looked at the photos I thought “They get so much better stuff in their supermarkets over east” as you had mini pepperoni slices. Then I read the recipe, sliced twiggy stick! Genius!
These are so cute and so simple! Love it. Pinning it to my Food for Kids Board! And then to my appetisers board as these are defo not just for kids 😉
Yum x
Nagi | RecipeTin says
You don’t like tomato sauce? YES you are odd….and now I have a secret weapon for when I don’t want to SHARE something with you!!! Ha ha ha!!
Claire | Sprinkles and Sprouts says
Hehe, yup it is a secret weapon! Everyone is so mean stopping me stealing food!!!?!?!?! 😉
I do like tomato sauce, but there are certain foods I can’t stand it on. Sausage rolls, cornish pasties (in fact any pastry product), battered fish, eggs, the list goes on…… But I love it on hot chips or sausages!
I know, I am odd lol

Such a clever idea. 🙂 I often have bread dough when I don’t have other bready items, so this would be brilliant for me. 🙂

Thanks Krista! Bread dough? You mean homemade?
